Manticora are one of the best power metal bands, they use double bass drums, fast guitar solos, and high-pitched vocals .. yet at the same time maintaining seriousness in their music by some interesting lyrics ( rather than dragons and princesses ) , and some thrash influences which makes the music less cheesy.
Xo, the concept of symphony contradicts the very foundations of metal, which is supposedly simplistic heavy "badass" music. Nightwish are a nice-to-ears music with distorted guitars and operatic vocals, but is arguably metal .
On the other hand, the new System Of a Down is totally asskicking ! I usually don't like NU Metal music, but the music in Mesmerize is just great, and the lyrics are very intelligent with much "double-entendus". With Mesmerize, SOAD transcended NU Metal, like Nine Inch Nails and Tool did before them, to move into more intelligent ( yet crazy ) music.
Fave Tracks : Soldierside, BYOB, Revenga, Violent Pornography, Sad Statue, Lost In Hollywood.

I disagree with you on symphonic metal , it's a kind of metal as much as the Doom , Black , Trash , Dark, Death , Epic ...
That's in my opinion the beauty of metal , the diffrence between diffrent style and the faculty of creation of groups
