you reminded me of mjadra 7amra. ta3rfeh il weldeh wa''afit tutbokh mjadra 7amra. apparently you're supposed to (semi) burn the onions to give it that color (and taste). But there's been research that suggests burned fried food may cause cancer

So now we've stopped making it and eat mjadra 'binneh' instead..lol
