there is nothing called white honey

It depends where the bees is raised
If the bees is on the cost the honey is extracted from the lemon family thus the honey will be near to the white/blonde

If the bees in raised in the moutains the bees will extract the honey from the "sendyen","bellen","tayyoun" and Pine thus it will be dark aka black.

Each kind of honey has different look and taste depending on the flowers extracted from

Interesting!

Encarta - White HoneyBee honey is composed of fructose, glucose, and water, in varying proportions; it also contains several enzymes and oils. The color and flavor depend on the age of the honey and on the source of the nectar. Light-colored honeys are usually of higher quality than darker honeys; white honey is derived from the Californian white sage, Salvia apiana. Other high-grade honeys are made by bees from orange blossoms, clover, and alfalfa. A well-known, poorer-grade honey is elaborated from buckwheat.

Wiki - White SageSalvia apiana, also known as white sage, bee sage, or sacred sage, is an evergreen perennial shrub of the genus Salvia, the sages. It is native to the southwestern United States and northwestern Mexico, being found mainly in the coastal sage scrub habitat of Southern California and Baja California, on the western edges of the Mojave and Sonoran deserts.
